My Grandmother's cakes

Eddie.jpgToday I want to tell you about my grandmother's delicious cakes. My grandmother has passed away now, but when she was alive I often went to visit her. She made some great cakes!


My favourite cake was called Louise Cake. I do not know how it got the name "Louise" but it was very good - very simple. It has a layer of pie crust and then a layer of raspberry jam and on top of that, a layer of coconut meringue. The coconut meringue is soft inside and crispy on the top - mmm! It is quite easy to make, I used to make it often when I was a child.


Another great cake she used to make was called Pineapple Upside Cake. This one was difficult to make, but a great cake. It is served hot. Slices of pineapple are put in an oven tray, and on top of them is a kind of sweet, soft cake made with brown sugar. The cake cooks in the oven and the sugar from the cake mixes with the slices of pineapple. When it is finished cooking, the tray is turned upside down, so that the cake comes out with the pineapple on the top. It is sweet, sticky and delicious!
In summer my grandmother also used to make this cold pudding called Lemon Fluff. It was a soft pudding that was whipped and beaten so it became light and fluffy. She also made passion fruit fluff as well, which was fantastic.


I remember once when I was a child, my cousin and I decided to make some Cocoa. We were staying with my grandmother, who always went to bed early, so we were up late by ourselves. We boiled a pot of milk and added some Cocoa powder. We tasted a little with a spoon and decided that it was not sweet enough so we added some sugar. After that we started adding anything sweet that we could find - pieces of chocolate, jam, lemon juice, raisins, honey. It became a kind of game. Later, when we stopped adding everything and tasted the drink, it was way too sweet! We were just naughty children, so we did not clean it up - we just left it in the kitchen.


My grandmother always used to get up really early in the morning. When she got up that morning, she found the sweet drink we had made. My grandmother grew up in the Depression, so she never wasted anything if she could help it. Instead of throwing the mixture away, she added flour to it and cooked it into a cake. When my cousin and I woke up, there was a delicious cake waiting for us. We were so impressed with our grandmother to be bale to make a cake out of our mess! The cake tasted so good that we wanted to make it again, but because we had made the drink without really thinking about what we put in it, neither of us could remember what we put in it and we could never make it again. Because of this, I have given the cake the name "Grandmother's special once-in-a-lifetime cake"!
